Absinthe

And that François Mitterrand, on a visit to Neuchâtel, has seen himself offering a soufflé to the family in full prohibition ?

Tania Brasseur, lecturer in letters, member of the Swiss Culinary Heritage Committee and head of the Slow Food project, conducted an investigation in the Jura, home of absinthe, with the help of photographer Tamara Berger. She reveals the secrets of the plant, of the aperitif that made it famous and of the people who continue to live it today.
